Buffet Setup Order Worksheet
Use the table to build the buffet in the same order guests will move through it. Write each position, the food or supply placed there, why it belongs there, the serving tool, and where its refill comes from. The final flow check is there to catch the problems that cause backtracking: drinks mixed into the food line, a blocked exit, or a refill route that crosses guests.
Build the guest path first
Start at the plate end and write the sequence guests should encounter. The “Why here?” column forces each placement to solve a flow problem instead of becoming decoration.
Plan the helper path separately
Use “Refill from” to record where backup lives. A good buffet lets a helper reach the back of the line without pushing through guests.
Walk the line once
Before guests arrive, walk the route with a plate in hand. Move anything that forces a reversal, blocks the exit, or makes drinks compete with food traffic.

Do I need to fill all nine positions?
No. Use only as many rows as your buffet needs. Fewer well-spaced items are better than filling the page or table for appearance.
Where should drinks go?
Usually on a separate surface when space allows. That keeps repeat drink trips from cutting across the food line.
What belongs in “Why here?”
Write the operational reason: start of line, after the food it accompanies, easy to refill, or placed at the exit so guests do not backtrack.
